Crab Brandade | No Mayo/Cream Cheese Dip

Crab Brandade Recipe

1 can crab claw meat
2 medium Russet potatoes, diced
6 cloves garlic
3-4 springs of thyme
1 bay leaf
⅓ cup olive oil
½ cup sour cream
pinch of cayenne & nutmeg
zest of ½ lemon

Add diced potatoes with salt, thyme, bay leaf, and garlic in medium pot and cover with water. Boil until soft (about 15 minutes). Strain potatoes from cooking liquid, remove herbs, and separate garlic. Reserve about 1/2 cup of cooking liquid. Heat olive oil in small pan with garlic over medium low heat and lightly cook garlic to infuse flavor into oil for about 10 minutes. Mash garlic into oil. Combine potatoes, crabmeat, mashed garlic and oil to a large bowl and mix on medium speed until fully incorporated, adding cooking liquid until it loosens into a spread mixture. Add sour cream, cayenne, nutmeg, and lemon zest to taste. Continue mixing until everything is evenly incorporated. If serving warm or hot, bake at 400F for 10-15 minutes until bubbly.
