Raw Scallops

Scallop Crudo Recipe
1 scallop, sliced thinly into 5 pieces
3-4 slices, finely shaved shallot
1 tbsp capers + 1 tbsp caper brine
1 tbsp chopped chives
1 tsp lemon zest
olive oil for drizzling (Croatian Chiavolon, recommended)
juice of 1/4 lemon
Plate everything but the lemon juice - squeeze lemon just before serving.
Scallop Tartare Recipe
1/2 avocado, diced
3-4 scallops, diced
salt and pepper to taste
1 tbsp chopped chives
2 tsp fresh grated ginger
1/4 tsp toasted sesame oil
2 tbsp ikura (salmon roe)
1/4 lime
Combine scallops, chives, ginger, sesame oil, salt and pepper. Taste and season as needed. Stack avocado, scallops, and salmon roe. Squeeze with lime juice just before serving.
